Garage ceiling

I am thinking of dropping down the ceiling in the integral garage and replacing it as it has holes left from previous owners and this makes cold air drafts come into the bathroom above it
Questions are basically, what is the material called that is up there at the moment, its 8' x 4' sheets approx, its fibre based, looks like asbestos but isn't and grey in colour.

I am going to insulate the void while its down, is there any recommendations for thickness or type or is it just a case of filling the void?

If moist air from the bathroom can find its way into the voids even after insulation and the garage ceiling is cold you could have a condensation problem leading to rot in the wooden structure.
