Getting a perfect yacht varnish finish

I've made a table & have given it several coats of yacht varnish sanding between each coat. I want the top to be a perfect finish without any dust or anything but can't seem to get the finish I want.

Is it possible the sand with wet & dry to get a flat finish and then polish it up again for a perfect shine or is it a case of once sanded the shine has gone for good??

If your brushing then the finish will be inferior compared to spraying.
