lay them on a bed of screed sand and cement.
mix the screed semi-dry as the suction within the sets will be virtually nil.
a 10-15mm joint looks ok between sets and can be pointed using the same dry screed mix.
pack it in between sets then brush off. in my opinion a brushed finish to the pointing does not look amiss in this situation, however you can strike it with a pointing trowel to give it a better weathered finish.
