What issues, potential problems should I think about?

I've seen 50mm thick boards that work out at about £50/m², which is tempting...

If its green oak it will move and shrink a lot.

At 50mm thick I doubt you will straighten any bowed boards so the joi to won't be even along the length

Tis a shame. I've seen green oak used for stairs, walkways, bridges etc at many NT, EH, and similar properties, and I really like the way it looks, and ages.
