What is the best thing to protect sandstone with, from heat and staining ?

no need to protect it from heat, but for staining have a look at lithofin mn stainstop or ltp mattstone.
Heat wise it depends on how far from the wood burner they are - the tiles will be fine but make sure you use a suitable addy and grout
