Halogen Ceiling Lights

I want to replace eight R80 reflector lights in my kitchen ceiling with halogens.

As all the halogen fittings are smaller it seem that I have no options but to fill in the circles of R80 fittings and cut new holes for the halogen fittings.

Should I go for mains voltage or low voltage? (I have two mains voltage in the bathroom for over 18 months and not had to replace a bulb yet).

Assuming I use 50 or 60Watt lamps is there any recognised formulea for number of lamps and spacing?
