If it’s out of date the chances are it’s had it this time of year but it all depends where & how well it’s been stored; the only way you will really know is to mix a little up & see how quick it goes off. Personally I’d skip it if it’s only a bag or two, it’s not worth the hassle it will give you if it's going off too quickly & it may even go off in the bucket; I won’t even use close to date plaster & if it's been opened forget it.
