I understand what to do except this:

"Where necessary connect a fixed earth wire to the earth terminal on the accessory and then connect a short length of wire from the accesory earth terminal to the earth terminal in the wall box. If the earth wire is bare it should be sheathed with a length of green/yellow sleeving."

I have a chrome dimmer switch from homebase that i want to install. It has a green/yellow earth wire fitted to the plate. Do i just connect the end of that to the earth terminal in the wall box?
The instructions make it sound like i use 2 wires, bother running from plate earth terminal to the wall box earth.

so long as there is an existing earth wire in the back box, you can connect the earth wire from you new switch to this terminal (along with the existing earth wire)

So i just leave the old earth as it is?
 
so long as it is connected to the back box then yes, but you also connet the earth wire from your new switch to this point too
