Hot water cylinder too small?

60C is reasonably hot.

If you turn it up a bit, you will have scope to add a bit of cold, or let the cylinder run to "warm" before getting in, but there may be a scald risk.

the lower down you mount the stat, the more often the boiler will fire up to heat the bottom of the cylinder as you draw a bit of hot. I have sometimes considered having a "summer" stat nearer the top and a "winter" stat nearer the bottom. I moved mine down a bit when the cold weather came.

Ok, quality!

I've moved the thermostat down. I found an installation manual for the thermostat I have and as you guys correctly say it should be between 1/4 and 1/3 up from the bottom of the cylinder.

Turning up the water temp sort of worked but trying to control the shower became more difficult on the hot tap!
