hot water problems

hello, I am experiencing problem with my hot water. I have measured it at 75 degrees C and cannot get it to be any cooler. I have a normal gravity fed (s-plan) system with the hot water cylinder in the loft. To check the operation of the cylinder thermostat I turned on the hot water demand and then turned down the stat until it clicked (just above 50 degrees!). I pulled the stat (drayton HTS-3) off the cylinder. There looks to be a significant gap between the metal plate on the stat and the cylinder. It looks to me that the plastic case only of the stat is touching the cylinder. I suspect that this is wrong. Any ideas?

Have same stat, looks like plastic casing should touch cylinder wall. Make sure stat is functioning as it should, turn it right down and see if the HW valve closes. (If you dont hear it 'whirr' then check, there should be resistance on the lever on the valve.)
