How do you bed a granite hearth?

Current constructional hearth needs to be dug away and then re-levelled with "a screed", according to my floor guy. Firstly, what sort of screed - anything special you should use for hearths? Secondly, how do I then bed the granite hearth on top of this - what do I use? And what thickness would whatever I use need to be? (I am doing the hearth flush to the floor so I need to work out exactly what level to bering the screed up to).

I'm unsure why you would screed, is the new hearth smaller than the old one? If not them this seems to have been over complicated and I'd simply level and bed the hearth on mortar.
 
I'm not sure either - that's just what my floor guy told me to do! The current hearth was raised and the new hearth is going to be flush so the constructional hearth needs to be lower than it is now - but only by 20mm or so.
