How to drain re-fill gravity fed Hot Water system

I have a gravity fed hot water system with hot water tank and a cold water tank in the loft which feeds the hot water tank and upstairs cold taps. I have to change the monoblock mixer tap in the kitchen as it's leaking badly - the problem is the gate valve which shuts off the cold water supply to the hot water tank is seized absolutely solid - I dont want to force it otherwise I could possibly turn a small problem into a potential catastrophe - so I will have to drain the hot water system. Not done this before so need some guidance draining and re-filling the system without causing air-locks.
I will of course replace the gate valve when the system is drained.

I couldn't find any rubber bungs on fleabay would an end cap do the job?

Failing a proper bung try a lump of plasticine or bluetac to block the outlet of the CWS tank.
