I fitted a new thermocouple, pilot will light but when plunger button is released, pilot goes out.

Could be a faulty new thermocouple, but very very unlikely.

Could be you have not tightened it into the gas valve enough.

Could be a faulty gas valve, which will need an RGI to change it.
