What are these plastic bits called and where can I buy them:

They seem to be used inside the house on the reveals?

What sizes are they sold in and how would you stick them to a new, freshly plastered reveal?
 
Search for a eurocell branch or any buildings plastis supplier near you. They are called pvc trims and come in a range of widths from 25mm right upto 95mm shown in your photo, usually stuck on with a good bead of silicone run down the whole length of the trim.

But why would you need to use them on freshly plastered walls, they're generally used to cover gaps or damaged plaster lines?

I could do with using them as I'd like the insides of the windows to match round the house and tbh there's some parts of the plastering/rendering where it dips and bobbles up.

I thought using these would be a quick and easy way to get a nice finish?

Currently the join between the pvc trim and the window looks to be a very hard shiny silicone... what would this be?

They are for window fitters who can't plaster.

You wanna see what they do with brickwork....!

If it can't be fixed with silicone, plastic or foam forget it.

At least plastered reveals can be re-painted once they (inevitably) get grimy.
