Installing new/replacement pipework..where to start?

City & Guilds Qualified at college a few years ago but no experience!!!
Just a hyperthetical question (at the moment) If I were to take on a house refurb/project and the central heating pipework needed replacing/updating, where (within the property) would I start, taking into cosideration a new boiler and hot water storage vessel being fitted. This was never really covered at College, so still baffled.

If the pipework is copper it is unlikely is needs touching.
Only adjusting to match modern radiators and the like.

Similarly if installing a combi boiler it needs the old hot tank and header
tanks removing capping as necessary.
