Insulating bay from inside?

New windows are just being fitted and the plasterwork (lathe and plaster) is shot.

I am thinking of removing and insulating but worried about condensation build up from installing celotex between the beams?

Thought a pic of the top may help.

Looks to be a clear 60mm gap to fill.
