Internal rendering hardening within minutes

Hi,

I'm rendering my whole chimney breast, the alcoves and part of a wall with Natural Hydraulic lime (like a weaker form of cement but more fire resistant). I've applied the scratch coat but have found that it would harden within minutes despite having sprayed the very porous brickwork over two days with over 20 litres of water. I now want to apply the base coat using a hawk and plasterer's float but I also want to use a long piece of wood to make the wall dead straight. However my problem is the lime plaster will harden too quickly making it difficult for me to create a straight wall. Any advise please on how I can achieve this?
