If I were to wire all my lights in a ring would that be incorrect? Does it have to be a daisy chain circuit or am I ok to keep it as the ring I have already done?

Many thanks

Lighting is not wired in a ring, but as a radial. Have a look in Wiki.

yes that I now know, but if it were would that be wrong? Or is it still acceptable to use a ring? If not I suppose all I would do is remove the last wire from the last light that completed the ring??

a ring would be unconventional and in most cases pointless (since even the smallest sizes of T&E is overkill for lighting sized fuses). I guess it might be usefull to get down volt drop or EFLI on very long runs but i wouldn't imagine that to be an issue in a hosue.

unconventional wiring increases the risk to future idiots who work on an installation.

if i were you i'd remove one of the middle segements of the ring leaving two cables at the CU, that way you retain the ability to split the circuit easilly if loads increase.
