A good carpenter will be able to cut and fix plasterboard and may be able to advise on how to plaster/board the solid wall. But he will need to be able to skim the board too, so maybe ask a plasterer to quote as well.
Boarding out was traditionally a joiners job (it was certainly in the C&G syllabus when I trained) and we still do a fair amount of it although these days with the introduction of metal framing and partition systems it tends to be more of a dry liner's thing on bigger jobs.
