Jointing and taping

I am a disaster when it comes to mixing, I can never get it right and would like to go with Knauff Pro Roll Light Plaster to go over plasterboard.
Question is, once applied, taped, sanded how would I know if a 2nd coat is needed?
 
Second coat is needed if its rough.

Fill joints. Tape them. Then skim. Thats will stop the joint sag.
Not a product I've used much of. I prefer mixing my own powders as you can control the thickness and they set so you can get another coat on and keep repeating.
Always a good idea to keep going over set plaster or filler as when it's dry it's a problem with the suction
