Does anyone know of an underlay that can be placed over quarry tiles before laying vinyl flooring so that the vinyl does not mould to the lines of the tiles but just lays flat? :D

Latex screed is fine, although I prefer an acrylic screed, which should be available from any flooring supplier.
The floor should be clean and de-grease if necessary. Then apply the screed with a steel trowel held down to the floor so that the screed is scraped on, which applies a very thin coat to the top of the tiles, but infills the channels.
I know a lot of DIY suppliers stock water mix screeds but I wouldn't trust them. Good water mixes are expensive and the floor must be primed first...latex or acrylic screed is cheaper and does the job.
