Laying slabs with no gap and no mortar?

I am buying a new house being built by a small building company at the moment.
I saw that in the other houses he has built he lays the slabs just butting together.
I asked him about it and he said that's what they always do! and they don't get any problems?
I am worried about weeds growing in between them. We have a brick paviour patio at the moment and it's a nightmare keeping the weeds away.
We are both well into our seventies now and we need something with less maintenance. I would prefer slabs with resin mortar.
Do you think I am right or do you think the builder knows best?

I have block paving in my front garden. Although there is a membrane under it, we still get weeds growing through the sand.

That said, we have fake grass in out back garden, and we get weeds growing through that.

You seem to have answered your own question though.
