I have replaced my 50W halogens with 1W LEDs in a corner of the bathroom that required virtually no light. Is it OK to cover the fittings in the loft with insulation (Rockwool)? They have a sort of hood with holes -presumably to allow air circulation.

No that would be unwise.
Follow the manufacturers instructions - normally around 100 - 200mm insulation gap around the down lighter.
