Level up an uneven wall before tiling

Hi

I've got a 3m wide wall in various states I would like to finish with wall tiles. It's only from about waist up I need to tile as it is behind a cooker, fridge and above a worktop.

1st metre appears to be cement or something like that and the level the rest of the wall needs to be. (above worktop)

2nd metre is new brick and about 1-2 cm recessed of cemented section. (behind cooker)

3rd metre is old soft brick (guess at 200 years or so) and firstly needs a bit of repair to the top to cement in loose bricks (don't ask). (behind fridge)

What approach is best given it's going to be tiled on. What should I use? Plasterboard or plaster straight onto it?

I assume I've only got to do anything to the 2 recessed sections to get them level with the cemented bit.

Get it plastered, or dry line it.

Plastering would be my prefered option here.
