Levelling Joists.

Hi,
I've knocked two rooms into one, done the solums and am now trying to get the joists down.
I need two lengths meeting on the centre sleeper wall (the remains of the dividing wall.
I've bolted the first two lengths together and started at one side of the room trying to level them off but it isn't just as easy as I thought it would be!. I had them levelled on a couple of small bottle jacks then set them onto strong cement on the sleeper walls but I'm left with gaps under a couple of places, maybe the cement was too wet?. I had wrapped the joist in bits of DPM where it went onto the cement.
Would it be more sensible (easier!) to level the joists independently rather than bolted together.
I think that once I can get the first one done properly it shouldn't really be a problem.
