I’m trying to level the floor in a bedroom but it runs properly downhill. Is it a problem to just sister the joists together when it’s dropped around 1 1/2 inches within the first 5 feet?

No. Just make sure you have enough fixings. The main thing you'll have to watch out for is where the sistered section starts because when you fix down your new sub-floor onto it the fixing point line changes
