Levelling the garden

Hi all,

We've got a conservatory where we are looking to have a level threshold deck come out but the problem is, our garden slopes quite a lot so we had the idea of building a retaining wall at the back and then going off level from there. Hopefully the pictures will do some justice.

My question is, as we've been digging, what is the best way to get the level right? String? Laser line level?

Obviously as our garden slops up away from the house, we need to dig further down for the retaining wall so that we can then come off from there.

Water Level - a hose filled with water - a person @ each end - hold one end @ the datum point, then raise /lower the other end until the water is @ the same level. You may find them on the net with clear ends so you can see the water in the tube. It can be done by having the spillover as the marker - just top up with a jug.
