I've just bought a light fitting for my kitchen but have noticed that there is nowhere on it to connect the earth wire to. What should I do with the earth wire ?

If it is class 2 then terminate the earth at the fitting. I leave the earth wire just as long as the rest, sleeve it, make a small roll of it and tuck it out of the way behind the fitting.
