The gaps between my rafters are 560mm , but i cant seem to find any where that sells that width in blanket insulation .

buy a 1200mm wide 'combirol' of insulation. this is partially pre-cut to 450mm and 600mm. you then cut the roll according to your joist spacings. in your case it will be 600mm.
