low ceiling height/loft conversion

Hi guys, any advice welcome! thinking about loft conversion on our house, back garden is very steep(patio level with guttering on rear of house). Ideally would like to build up side wall on rear elevation make that a flat roof, have doors on back to lead into garden, maximum height in loft at the moment is only 6ft6, also what I have in mind wont be overlooking anybody, so should be ok pp wise. So what I what I would like to know is can I build over the height of current ridge to overcome lack of ceiling height or is there any other to get over it,

Yes you can but will need planning permission if you're altering the size of the roof otherwise building permission.
