MDF backing on stainless steel splashback?

Hello, I am going to fit a stainless steel splashback on the wall behind our hob and, searching the web, some seem to be offered as steel only and some with MDF backing.
What are the advantages and disadvantages of these two styles?
Does anyone have an opinion on which style I should choose?
By the way I am going to get it cut to size as it is not a simple rectangular shape - more like an upside-down T.

The MDF variety is better if you have an uneven surface to bond onto
