I am refurbishing an old house and am considering MVHR for 5 'wet' rooms only (3 bathrooms, kitchen and utility) with a single air return into the main hall void. The MVHR would only run for X minutes when a wet room switch was triggered. This way heat is saved, wet rooms are ventilated, noise is minimised and reduced number of holes in external walls.

Good or bad idea?

Its the same principle regardless, the ventilation should be constant [trickle] and boosted when need be, not "on/off".

It could be good choice of system, if professionally designed to take account of the layout and volumes etc. I understand that these systems get better performance in highly insulated and draught-proofed homes, so again a specialist ventilation engineer could advise better.
