I chose a gardening career over 13 years at land rover! best decision i ever made. my advice is get on the grass cutting side, start with local houses then buy a ride on and get some industrial contracts. quote them on a fortnightly cut but invoice them every month, ie: 12 months per year, that way when its minus 10 and your at home with your feet up you can still issue invoices. I have about 7 contracts like this which bring in about £700 per month. Best of luck! and stick with it.
You'll need some decent kit - Transit pick up with mesh sides if you are going to do hedging etc, and somewhere to dispose of the vast loads of brash that you'll get.
Invest in good machinery.....Stihl or Husqvarna for chainsaws and hedge cutters, Honda are good for domestic mowers, Countax good for ride ons.
Good luck if you go down this way.....there does seem to be loads of people setting themselves up in this way, though.
