New combi installed. How to disconnect pipes?

Hi,

I had a new combi installed a few weeks ago. The installer left me a couple of stopped pipes to extend to my new kitchen sink and left the old ones in for me to remove when I was ready. I'm now ready to cut off the old pipes but how can I do this? Can I just shut off the mains water to the boiler now? Surely I don't have to drain the system or anything?

Is it just a matter of shutting off the main stopcock, switching off the boiler, and emptying the pipes by running the hot and cold water?

switch the main off as i assume you will be cutting the cold as well

just about covers it have a bucket handy tho you always get some water lying in the pipes :)
