Hi,

When connecting a replacement hob is it okay to cut the 6mm cable and connect to the existing cable via a suitable junction box, or do you have to go back to the original t'off with the oven unit?

If not, is it okay to blank off the existing cable and then connect straight back to the switch unit?
 
Are you saying there is no connector plate on the wall under the hob?

If so, use one of these.

Can be surface mounted on a patress box.
 
As picture linked by EFLI, you ideally require a cooker outlet plate to connect the cable from the isolator switch to that of the hob.
This should be located in a position that leaves it accessible for maintenance, inspection and testing.
