New Oak windows - finish recommendations

Hi

Just spent a fortune on Oak windows and fixed panels for our project however stuck on what finish to use.

i have 2 options

1. Leave them to go silver - do they need some coating for this?

2. Ideally i want to keep them looking "unfinished", dont mind the work to coat them 6 times but want to keep the same colour, the wood care people im talking to have said thats almost impossible and to use Osmo.

Any other suggestions?

Danish oil as a basecoat / primer followed by 2 coats of Light Oak Sikkens Cetol Filter 7 is what I tell my customers to put on European Oak when they want to retain the natural appearance, but also protect the timber from decay and bleaching.

Nearly all the internal joinery in our house has only been sealed with Danish Oil . This brings out the grain whilst retaining an unfinished look.
Brush on - leave to soak in for 10 minutes then rag off, is the way I do it.
