Have a new plaster ceiling in klitchen, will leave 2 weeks then get it painted, the approach on Dulux website as below, but Painter is saying this is old way, and now should be all Vinyl matte.

Is there any reason not to tell him to follow Dulux process?
 
All paints ( and building materials) have a data sheet (instructions) look online.
So each paint can have a slightly different application or preparation over dry surfaces like plaster.
Often it's 10% water added for first coat but I normally add a bit more. The retail Dulux with dog on can, has thixotropic agent in it for the DIY market and that's not great over plaster.
You can use a plaster sealer like gardz then emulsion over without thinning.
I use bathroom scales for thinning paint as it's easy to do.
 
I am thinking to use Trade white matt thinned for Mist coat, and probably Crowne Trade Clean Extreme for 2 top coats
 
I think crown recommend using the clean extreme as a mist coat.
It's because durable emulsion don't like being applied to anything that is not a sealed surface.
You may end up using clean extreme as a mist coat over the vinyl matt
 
Why use a durable on the ceiling?
Will have around a 5% sheen as a durable.
You would be better with a lower sheen matt
 
Because it's a kitchen ..... and advice is 'kitchen & bathroom' paint (or the TRADE equivalent eg Clean Extreme) you are right I don't particularly want a sheen.
