What product can you recommend to apply to an oak floor in an entrance hall, it has an old varnish which I am going to sand off first? I am leaning towards wax/oil as it's easier to repair if damaged, the client want's the hardest wearing surface.

Old varnish should be sanded of completely if you want to apply any new finish.
HardWaxOil is hardwearing, but doesn't show as shiny (like a film layer varnish or lacquer does). Can be locally repaired (light sanding etc) when damaged again - where you cannot do that with varnish, no matter how hardwearing the tin says the stuff is.
