old tired conservatory needs re doing (wood question)

I have a wooden conservatory, its completely wooden and been unloved for years (by previous owner) it looks like it has cheap shiplap tongue and grove on the outside, pinned to 4x2 studs then plasterboard on the inside.

my plan is to completly go back to the stud which looks sturdy and built well, ive got 3 upvc windows coming and a upvc patio door (all im mahogany colour)

now for the question, i dont want to use cheap shiplap, i want a decent long lasting t and g replacement, what do you guys recommend? also for corners ie where the front meets the side say, what do you do to seal the join, at present its just been left as is.
