Options for walls after removing old plaster

We considering removing old plaster from wall in our 1930s house, due to walls are past the prime date and we nearly finish with house rewire ideally wanted to remove everything back to brick and looking for solution to cover the walls our self, I'm not going to lie I have no idea how to plaster full wall, I'm confident enough to do smaller sections, I was looking in using plaster board glued to brick, we had a plumber is well to reposition rads and run new pipes so as you can imagine house is full of holes, chunks missing already and we living in it, if I went with plaster boards we could do room by room in our own time, what do you think?

In some ways Dot&Dab plaster boarding can be almost as tricky as solid plastering. It can also involve more than just boarding ie skirtings, architraves, elec devices and so on.
Maybe you should be cautious about reducing all your walls back to brick.
If you do persist then whatever the method start with one wall in a back room.
What about ceilings?
The holes and chase runs can be filled in with whatever is on hand eg sand and cement or hardwall or a mix.
