I'm fitting new joists to our old house, and the load bearing wall is rubble. What are your thoughts to packing them like this? Seem OK, but wondering whether I should be shuttering and making a cement pad. (brick looks wonky in pics, but is actually straight!)

No need to shutter - prime the pockets/openings with a S&C slurry and then pack up with a very semi-dry mix of S&C at 3:1

The joist tails should be wrapped in DPC material.

FWIW: the lower rubble wall should be raked out and pointed up.
Do you have any damp conditions?
