Peach and nectarine foliage

My peaches and nectarines are coming along so I am not entirely peachless. However the foliage is so dense that little sunlight gets through. Can anyone tell me if I can pull of any leaves that block the sun and if I can disturb the ripening process by so doing. Thanks
