The marbling is not the issue its the flat shape like its been run over by a car. I go through the fillits to find ones that are more like a hockey puck shape.How so. Not an expert. We usually go for sirloin with decent fat and marbling.

The very best steak I know of that is readily available is aldi waygu (yes I know its not full blown waygu) but its never failed to be a good one but even then I look through all the packs for either sirloin or rib eye and some have more wagu marbling than others. I find that people do not know what they are doing and so leave the best ones with the extra marbling on the shelf --- for me.![]()
