I've disconnected my phone and although I took note of wires, I can't seem to get it reconnected.

An in focus picture would be better. You should have 2 wires coming into your master socket from outside the property. you then have 3 wires to each secondary socket. You will find some useful information at http://www.telephonesuk.co.uk/wiring_info.htm

This is an extension connector where the line comes into the house rather than something connecting to a socket.

Seems different from those on the diagram.

If this is before your master socket, it will be 2 wires usually the blue/blue & white. These needed to be linked to the 2 wires going out of the junction box. I think that you have a box like one of these.

This box links up to 4 pairs of cable. pin 1 at the top, is linked to pin 1 at the bottom 2 - 2 and so on. You need to connect the blue/blue & white from the incoming cable to pins 1 & 2 then connect the outgoing cable to the other pins 1 & 2.

So, it looks like blue & orange need to be on the bottom left although a bit difficult to tell from that picture.

What are all the other wires hanging out or do I just ignore those?!

Looks like your incoming cable is just the old two-core figure 8 style stuff. If the incoming cables go to 1 and 2 then the outgoing cables should go into the associated terminals on the other side, but at the minute you look to have them at opposite ends of the JB. It should be a case of using both orange cores or both blue cores, but not a mixture of colours, otherwise they wont form a twisted pair.

Phone lines are run using a pair of wires that is twisted together in the sheath. This is to reduce noise on the line. Typically cable with more than one pair of cables is used. This means that if there is a problem with one pair, or you want an additional line they can use an additional pair.

From what I can make out from your picture you have 6 wires, a Blue pair, a green pair and an orange pair. The 2 greens and 1 orange are bundled together and the 2 blues and the other orange are free. i suspect that the orange wire may have been connected to pin 3 in the master socket thus running the bell wire back to here. This means that you could run a secondary socket direct from this junction instead of coming out of the master. Connect the blue pair across the left had 2 pins at the bottom of your pic and put the orange in the slot next to it. If you feel like it, have a look in the master socket and see if pin 3 is connected to the orange cable in this wire.

It looks like an old dropwire or lead-in cable has been forced into the IDC connectors top left of your piccie. Although these connectors aren't designed to take that size wire it will probably be OK, except the connectors are sprung too far to take a second cable. This cable would normally be connected to screw terminals in a master socket.

The two connections bottom left are usually connected internally to the top left connectors, and should take the blue/white and white/blue wires, but there are some 16 -way boxes around that don't have an internal connection between the two rows of connectors.

If your box doesn't have the internal connections, you will have to try and terminate the internal cable on top of the dropwire, if the terminals will still accept it.

There is another version of the same box with both IDC and screw terminals made for this job.
