I am replacing all my skirting boards and have taken them all off but in doing so all the plaster behind the skirting has come off back to the brickwork what should i use to replace it

bonding plaster! then stick your skirtings back on with no more nails or similar.
you can repair it with just about anything, as long as you make the surface flat so the skirting board fits as close to to the wall, without to many gaps and twists.
