Just about to start fixing plasterboard to the ceiling, and was going to run it in the direction of the joists. The builder who built the extension happened to come round today and said it had to be the other way, with the length perpendicular to the joists. Can anyone tell me why this is the correct way?

Your builder is right; it provides the maximum strength to the longer, unsupported board joints running across the joists. Fit the boards so the shortest joints run along the centre of a joist & stagger the boards so these joints aren’t in line. Use screws only, not nails.
