Plastering a Kitchen Wall

Hi all, I am about to embark on replastering my kitchen walls but I am not sure whether to use sand and cement or thistle hard wall bonding plaster for an undercoat.
The condition of one of the walls already has a sand and cement render with large areas bare brick where I have had to cut back blown plaster.
Can anyone advise me on the best method on what to use to patch up this brickwork? Cheers.
 
I had mine done last year and plasterboarded it first.
It is worth the extra expense as you know the finish will be nice 8)
