Plastering underneath staircase

I've got an old 1906 small terraced house I currently renovate and I'm wondering how to plaster the underneath of a staircase.

Currently it's got lath and plaster and my builder asked me not to remove it as he will fix plasterboard on top of the lath and plaster.

Wouldn't it be better removing the lath and plaster and stick some battens on the back of the staircase to fix the plasterboard onto ?
