ply stain and varnish

I am laying some Flooring Ply. It has a not-very-elegant spruce finish. I was thinking of staining and varnishing it (although it is going to be covered later with carpet or mats or vinyl) for temporary protection and appearance. It is in the kitchen so is likely to get splashes and drips on it.

I believe a moisture-curing polyurethane gives the hardest finish, but I would prefer a water-based varnish as it smells less; but I can if need be treat them outside and leave then to dry. I thought I could use Colron to give a honey-colour first as the spruce is nearly white.

Any suggestions?
