Just make sure your adhesive is suitable for the less porus porcelain, something like the BAL ones with "porcel bond plus". And if you need to drill them for rad pipes etc you will need a diamond cor ebit like these.
Why do you need flexible if its onto concrete? Normal rapidset will do Though I would probably go for BAl Motobond as they are quite large format.
You should only need to self level if the floor is very rough or uneven.
Setting out depends on shape of room, direction tiles will mostly be viewed from and if you are going to keep them all alighned or lay them brick bond.
